Chicken, Sweetcorn and Cabbage Crockpot Soup (Low Fat, Clean and GF)
This light chicken cabbage crockpot soup is a great midweek meal. Simple to make as well as being low fat, clean and gluten free.

Servings: 4 portions
- 500g (17½ oz) chicken (cooked)
- 1 large yellow onion (roughly chopped)
- 2 cloves garlic (roughly chopped)
- 100g (3½ oz) cabbage (shredded)
- 250g (8¾ oz) tinned sweetcorn
- 1 red bell pepper (roughly chopped)
- 1 tbs Worcestershire sauce
- 1 tbs fresh chives (chopped)
- ½ tsp oregano
- ¼ tsp thyme
- 1 bay leaf
- sea salt and black pepper (to personal taste)
- 500-750ml (2-3 cups) homemade chicken stock (see note 1)
- fresh parsley for decoration (optional)
Throw everything into a Crockpot/slow cooker, stir and set it on low for six hours.
An hour before the soup is ready, shred the chicken with a fork and add to the soup. Adjust seasoning if necessary.
Just before serving, sprinkle over a little fresh, chopped parsley. Enjoy!
