Spicy Pizza Dough Crackers with Mozzarella
These spicy pizza dough crackers are the perfect thing to plonk into your favorite dip. For the photos I had some chunky salsa, but they would be awesome with something creamy like my Greek yoghurt tzatziki or Greek yoghurt and feta dip.
Look what a beautiful colour they are (and they really were that vibrant).
These gorgeous little crackers came about because I had a roll of gluten free pizza dough in the freezer. I usually make my pizzas from scratch with a homemade spelt crust, but every now and again for convenience, I will make them with a ready made dough.
The only thing with gluten free pizza dough is that it can be thin, and I like a huge wedge of dough when eating my pizzas. It was the thinness that actually got me thinking about making crackers with it, instead. Whipped up in literally minutes, with nothing more strenuous than brushing on some oil and spices, the result was these amazing spicy pizza dough crackers topped with a sprinkling of mozzarella.
I wanted a good, strong flavour for these spicy pizza dough crackers, and piled on the chilli, and it really worked. Feel free to adapt the spices and herbs to your own taste.
Spicy Pizza Dough Crackers with Mozzarella
Ingredients
- ¼ teaspoon garlic powder
- ½ teaspoon paprika powder
- ½ teaspoon chilli powder
- ½ teaspoon chilli flakes
- ¼ teaspoon oregano
- ½ teaspoon sea salt
- 1 ready made pizza dough (see note 1)
- 1 tablespoon vegetable oil (any)
- grated mozzarella (sprinkling)
Instructions
- Pre-heat the oven to 175℉ (350℉).
- Mix together all the herbs, spices and seasonings.
- Remove the pizza dough from the packaging and roll it out. To make crispy crackers, you will need to get your dough as thin as possible, so you may need to roll it out further with a rolling pin. Thicker dough will produce softer crackers.
- Brush the oil over the whole dough.
- Sprinkle the spice mixture all over the dough.
- With a pizza slicer, cut the dough into 16 thin triangles, starting with cutting the dough into quarters and working from there.
- Place the triangles onto a large baking tray and sprinkle with the mozzarella.
- Bake for around 15-20 minutes, depending on how you want your crackers. The longer they are in the oven, the crispier they are.
- Serve warm with your favourite dip, or allow to cool. If not eaten the same day, the crackers do lose their crunch (but still taste great).
Notes
- My pizza dough was gluten free, round and 260g (just over 9oz). You can use any kind of pizza dough you like.
