Simple Homemade Strawberry Sauce (no refined sugar)


 

This homemade strawberry sauce is made with fresh strawberries and is whipped up in just minutes. Using honey to sweeten it, and no refined sugar, it provides a healthier alternative. There is no limit to the ways you can use it. It’s perfect swirled into Greek yoghurt or divine as a frosting for sweet bread.

Sweetened with honey

Although this quick sauce is deliciously sweet, there is no refined sugar. I love using honey in my food. Not only is it natural, but it provides a real depth of sweetness that can’t be matched with refined white sugar. I find maple syrup very similar in terms of what it does for sweetness, so you can use either in this recipe.

 

 

 

 

Using fresh strawberries

This recipe is a great way to use up fresh strawberries. If you are anything like me, during summer you will invariably have a packet of strawberries in your fridge, getting more forlorn by the minute. Sometimes I freeze any leftover strawberries, but they don’t fare well at the other end, so prefer to use them up. 

Of course, you can use frozen strawberries, or any other berries. Blackberries or raspberries would work like a dream in this recipe.

 

Using chia seeds in sauces and jams

Chia seeds are an absolute nutritional powerhouse. I love using them in seeded bread, or even in my soda bread. Chia seeds work so well in sauces like this and also jam, as they soak up liquid and in turn, thicken whatever they are in.

They are a great substitute for pectin, which means that making jam doesn’t always need to be laborious. I make a lovely refined sugar free berry jam with maple syrup and chia seeds. 

 

 

 

 

Storing the sauce

This strawberry sauce doesn’t have any kind of preservatives. The mason jar I kept mine in wasn’t sealed. It was last a couple of days kept in the fridge, but it’s unlikely it will last that long, it’s that good. 

 

Ways to use my homemade strawberry sauce

As mentioned, this berry sauce is so versatile. You could stir it into Eton Mess, swirl it through a strawberry pound cake, fill a cream cheese spelt braid or chocolate tartlet. You might even want to create a simple berry icing, like I used for my lime and berry mud cake and spelt raspberry and blackberry cupcakes.

 

 

Simple Homemade Strawberry Sauce

Course Sauce
Prep Time 5 minutes
Cook Time 25 minutes

Ingredients

  • 350g (12½ oz) fresh strawberries
  • 3 tbs honey (see note 1)
  • 1 tsp vanilla extract
  • 1 tbs chia seeds (see note 2)
  • 1 tbs water

Instructions

  • Hull and chop the strawberries and place them in a medium sized pan with all the other ingredients.
  • Cook the strawberries until they are very soft and have reduced. Mush them with a back of a fork (the sauce should be fairly thick), and leave them to cool completely.
  • Serve over ice-cream, in cakes, frosting or sweet buns. Enjoy!

Notes

 
  1. You can use maple syrup in place of honey.
  2. The chia seeds offer a nutritious element to the sauce and also help to naturally thicken it. However, they can be omitted if you prefer.
