My youngest son was sick a couple of weeks ago, and he likes nothing better than a thin, almost watery soup. I, on the other hand, like it so thick you can stand a spoon up in it, but seeing as it was him who was ill, the thin soup won out.

This chicken cabbage crockpot soup recipe is so quick – just fling everything in the slow cooker and just leave it.  

 

Using homemade stock for soups

I used homemade stock as I think it makes soup taste amazing. I also wanted this recipe to be as clean and natural as possible, so didn’t want to buy anything from the shops. It is easier to do than you perhaps might imagine. If you’ve never made your own, Jamie Oliver has a simple tutorial about how to make chicken stock, which is well worth a read.

That being said, we’re all busy, with lives that sometimes need simplifying. There are so many great, healthy options for buying stock these days, such as ready made chicken broth, bouillon powder, or even stock paste. And if you are as confused as I am, The Food Network has a very information article on the differences between stock, bouillon and broth. I always thought they were one and the same, but there are some noticeable differences.

 

 

 

 

Variations of this slow cooked soup

Throw whatever vegetables in you like. I normally use whatever is past its best, sitting forlornly in my fridge, but carrots, potatoes and broccoli would work great, too. Since first making this recipe, I am now a vegetarian and therefore no longer eat chicken. If you are also meat free, just omit the chicken and use mushrooms, which provide a delicious, filling, meat-less option. 

This chicken, sweetcorn and cabbage crockpot soup is perfect as the weather cools. It is filling, has almost no fat, is clean, gluten free and really good for you. Don’t wait until you are sick to try it.

This light chicken cabbage crockpot soup is a great midweek meal. Simple to make as well as being low fat, clean and gluten free.

Prep Time 10 minutes
Cook Time 6 hours
Servings 4 portions

Ingredients

  • 500g (17½ oz) chicken (cooked)
  • 1 large yellow onion (roughly chopped)
  • 2 cloves garlic (roughly chopped)
  • 100g (3½ oz) cabbage (shredded)
  • 250g (8¾ oz) tinned sweetcorn
  • 1 red bell pepper (roughly chopped)
  • 1 tbs Worcestershire sauce
  • 1 tbs fresh chives (chopped)
  • ½ tsp oregano
  • ¼ tsp thyme
  • 1 bay leaf
  • sea salt and black pepper (to personal taste)
  • 500-750ml (2-3 cups) homemade chicken stock (see note 1)
  • fresh parsley for decoration (optional)

Instructions

  • Throw everything into a Crockpot/slow cooker, stir and set it on low for six hours.
  • An hour before the soup is ready, shred the chicken with a fork and add to the soup. Adjust seasoning if necessary.
  • Just before serving, sprinkle over a little fresh, chopped parsley. Enjoy!

I have converted grams to cups/ounces/tablespoons using online converters. Although I have no reason to believe they are inaccurate, please be aware that I have not made this recipe with imperial measurements.
